🌿 Summer Glow Salad with Lemon-Honey Vinaigrette

Ingredients:

For the Salad:

  • 2 cups baby arugula or mixed greens

  • 1 cup sliced strawberries

  • 1/2 avocado, diced

  • 1/4 cup crumbled feta or goat cheese

  • 1/4 cup sliced cucumber

  • 2 tablespoons red onion, thinly sliced

  • 2 tablespoons roasted sunflower seeds or chopped walnuts

  • Optional: grilled chicken or chickpeas for added protein

For the Lemon-Honey Vinaigrette:

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon honey (or maple syrup for vegan)

  • 1/2 teaspoon Dijon mustard

  • Pinch of sea salt & black pepper

🍓 Berry Bliss Antioxidant Smoothie

Ingredients:

  • 1/2 cup frozen blueberries (high in anthocyanins and vitamin C)

  • 1/2 cup frozen strawberries (rich in antioxidants and fiber)

  • 1/2 frozen banana (for creaminess and potassium)

  • 1/2 cup unsweetened pomegranate juice (a powerhouse of polyphenols)

  • 1/2 cup almond milk or coconut water

  • 1 tablespoon chia seeds or ground flaxseeds (omega-3s + fiber)

  • Optional: 1/2 teaspoon turmeric + pinch of black pepper (anti-inflammatory boost)

  • Optional: 1 scoop vanilla protein powder or collagen


Instructions:

  1. Add all ingredients to a blender.

  2. Blend on high until smooth and creamy.

  3. Pour into a chilled glass, top with a few berries or a sprinkle of chia seeds, and enjoy!
